You’ll want to level up your veggies with this Maple Dijon Sauce 😋 Check out the recipe for these Maple Dijon Roasted Vegetables by @janetsmunchmeals 👀🌿

​This side dish will get people eating their veggies! Not only are these simple and so flavourful, but  you can easily double or triple the recipe for your family or group’s size ❤️

Serves 2 to 3

​Maple Dijon Sauce:
1 tbsp maple syrup
2 tbsp dijon mustard
1/4 tsp garlic powder
1/8 tsp paprika
Dash ground sage
Dash ground thyme

2 to 3 large carrots
2 medium zucchini
1/4 large red onion
1 to 2 tbsp olive or avocado oil
Chopped fresh parsley for serving (optional)

Preheat oven to 400 degrees F. Line baking tray(s) with parchment paper. Peel and chop carrot into bite sized pieces. Place pieces onto tray, drizzle with half the oil, toss, and sprinkle generously with salt and pepper. Place into oven. Then cut zucchini lengthwise, then crosswise thick cuts. Slice the red onion (if you prefer thin slices of onion, you’ll need to remove onions from oven early to prevent burning). Place onto a tray and sprinkle the remaining oil, salt and pepper. Place into the oven. Bake for an additional 20 to 30 minutes, flipping halfway. Carrots typically need more time than the zucchini/onion, but will depend on the size of the pieces. Meanwhile, stir the sauce together in a small bowl and drizzle onto veggies once they’re done roasting.
