White Truffle infused Vegetable Lasagna

This was sooooo good!!! Don’t be like me and cut into the lasagna before the 15-20 mins 🤣🤣. Can we say GREEDY!!

I have the recipe with instructions below. Enjoy my loves 😘

Ingredients

White truffle Sauce
5 Tb vegan butter
1 Tb white truffle oil
5 Tb of flour
1 shallot chopped
2 cloves of garlic minced
3 1/2 cups plant milk
1/2 c vegan cream cheese @followyourheart
1 bag of white vegan cheese @dai
1 container of vegan Parmesan shreds
1 c vegan Parmesan cheese powder
1 tsp garlic powder
1 tsp onion powder
1/2 tsp crushed pepper
Salt and Cracked black pepper to taste

Filling
1 16oz bag of carrots
1 head of broccoli chopped
1 heaping handful raw spinach
1 tsp oil
1/2 red bell pepper chopped
1/2 green bell pepper chopped
1/4 onion chopped
Salt and pepper to taste
1 bag of white vegan cheese @daiyafoods
1/2 c Parmesan cheese powder @followyourheart

Topping
1 c pancko bread crumbs
2 Tb vegan butter
Chopped parsley
1/2 tsp salt
1/2 tsp garlic powder

Noddles
Oven ready Lasagna

Instructions
Add butter to pan over medium high heat. Once melted add shallots and garlic. Sauté until still tender. Add Flour and mix. Gradually add milk and wisk until combined. Then add cheeses add seasonings. Once fully combined and melted add white truffle oil.

For filling sauté oil and add onions, peppers, carrots and broccoli and seasonings in a pan. Cook until Al Dente it will continue to cook in the oven.

For topping melt butter in a pan on medium heat. Add bread crumbs, parsley and seasonings. Cook until mixture is slightly golden.

Time to assemble
Pour a thin layer of sauce in a greased tray/pan. Add the no bake noodles for the first row. Add more sauce to fully cover the noodles. Add 1/3 of the bag of cheese and 1/3 of Parmesan powder. Add 1/3 of the filling and 1/3 of spinach. Repeat this step two more times. Once you’ve reached the top add noodles then just sauce and sprinkle the remaining cheese and Parmesan and top with bread crumb mixture.

Cover with foil and place in oven for 45 mins on 350. Remove foil and broil for 3 minutes on high or until golden. Let lasagna rest for 15-20 minutes before cutting. Enjoy
