Turkey Sausage, White Bean and Butternut Squash Soup 🍲
This recipe is so delicious and perfect for fall!! 🍂 I’ve been waiting for the weather to change to make this and so happy it’s finally soup season! You can find the full recipe and details on the @ww app, but here’s what I used!
1 large onion, diced
14 oz turkey sausage
2 garlic cloves, minced
5 c chicken broth
1/2 butternut squash, cubed
1 tbsp fresh sage, minced
1/4 tsp ground nutmeg
2 cans cannellini beans, rinsed and drained
1/2 lemon, juiced
Parmesan cheese for topping
Spray the bottom of a large pot and add your diced onion. Cook until soft and translucent, then add your sausage. Break into small, bite-size pieces. Once cooked, add garlic and stir. Add broth, squash, sage, and nutmeg. Bring to a boil and reduce heat to a simmer for about 10 mins until squash is tender. Add beans and continue to cook until heated through. Add lemon juice and stir. Garnish each serving with Parmesan cheese.
I split mine into 5 equal size servings for 3 points each 💙 Add points for however much cheese you use, I’m using 4 tsp grated parm for 1 additional point!
