Today’s the last day of my ~staycation~ before I head back to work tomorrow so I decided to whip up this delicious sweet potato hash and have a lil brunch 🍳⁣

118 gm / 1 c diced sweet potato⁣
1/3 c diced onion⁣
1 tbsp minced garlic ⁣
1 egg ⁣
Paprika, chili powder, salt, pepper⁣
Green onion for garnish ⁣

Preheat oven to 350. Add diced sweet potatoes, onion, and garlic to your cast iron skillet. I used my 8 inch skillet since I’m only feeding myself. Add seasonings and stir to combine. Cook on the stove until your sweet potatoes are soft. Create a hole in the center and crack your egg. Place skillet in the oven and cook until egg is done to your liking. I like my yolk nice and runny so just a few minutes will do it!! Garnish with green onions and enjoy! 😋⁣
