This book was really good. It’s so much more than a 1-month vegan challenge. It comes with 10 other bonus books that offer valuable information that isn’t found in any other vegan recipe book I’ve bought. I really enjoyed reading the guide on Macronutrients and How to deal with social challenges. Oh and the recipe book is definitely my favorite, which makes it easy to stick to the vegan challenge even after 30 days.⠀I highly recommend this book to anybody thinking of transitioning to a vegan diet. Honestly I just love a stir fry! They’re so insanely quick to make and feel healthy from being packed full of veg and also feel like a wee takeaway treat. Very rewarding! This is an old one I made and was from @marksandspencer.

They had a deal on where you could buy 4 things for a stir fry for £6 I think so definitely a lot cheaper than a takeaway too! We got a packet of mushroom & veg stir fry, vegan no chicken pieces marinated in chilli & coriander, rice noodles & teriyaki sauce. I also added some edamame. This was enough to serve two of us plus leftovers.

It’s so easy to cook up! Just a case of frying your meat substitute in the wok for a minute or two with some oil, soy sauce, garlic etc. then add the veg, then noodles and sauce. Can add more soy sauce/extra veg/fresh chilli etc if you like too.

It was so delicious and I really liked their vegan chicken substitute! Definitely the closest/best texture I’ve found so far so I recommend trying it out! 💛
