Sweet Potato & Sausage Bfast Casserole 🥔🍳⁣

BREAKFAST WITH A VIEW ⛅️🌊 TY @whataldenate for introducing me to this DELICIOUS recipe by @allthehealthythings! I made this for the group at the beach this morning and @becbecrogers gave it a 10/10!!!! This is perfect to feed a group, or even to meal prep breakfasts for the week! ⁣

Ashlea’s original recipe is paleo, dairy free, AND whole 30. I subbed a few ingredients to make it more @ww friendly 😁⁣ Split into 12 equal size slices, this comes out to 2 points per slice! 💙

10 oz turkey sausage⁣
3 c (315 gm) sweet potato, diced⁣
1 medium yellow onion, thinly sliced⁣
3 oz spinach ⁣
12 eggs⁣
1 c 2% milk⁣
1 tsp hot sauce⁣
1 tsp garlic powder⁣
Salt & pepper ⁣

Cook and crumble your sausage in a pan on the stove. Once cooked through, add diced sweet potato and let cook until tender. Add onions and spinach and stir until onions are softened and spinach is wilted. Pour into a greased 9×13 casserole dish. Crack eggs into a large bowl. Add milk, hot sauce, garlic pow, salt & pepper and whisk together. Pour over your other ingredients in the casserole dish. Bake for 15-20 mins until eggs are cooked through. ⁣

I doubled the original recipe. Ashlea baked hers in a cast iron skillet! ⁣Can’t wait to try more of her delicious looking recipes!!
