Stuffed Peppers 🌶
Threw these together with a few things I had in the house. Stuffed peppers are fun to make because there’s a bunch of different variations you can try!!! Tonight I used:
2 red bell peppers
2/3 c meat sauce I had leftover
2/3 c cauli rice
1/2 white onion chopped
1/4 c fat free shredded cheddar
Preheat oven to 350. Combine meat sauce, onion, and cauli rice in a pot and heat on the stove until onions are translucent and everything is combined. Slice your peppers, clear out the seeds, and stuff with your rice/sauce mixture! Place on a greased pan and bake for 20-25 minutes until peppers are soft! I counted each pepper as 4 points for the sauce! 💙💙
I served with zucchini and squash sprinkled with 2 tbsp grated parm baked at 400 for about 10 mins. Broiled for the last few mins to get the a lil crispy 😋 2 points for the parm 💙
