Spicy grilled corn salad on naan
Happy Wednesday, everyone🤗. Hope you are having a good start to your weekend. I was busy with errands for the past couple of days and my dinner was super simple.
Yesterday was a great day for some grilling and corn is on sale @sprouts Perfect salad meal. Quick question: do you remove corn husk at the store? My store has a big bin for customers to throw away the husk. I usually save mine for compost and this time, it’s for pictures🤩
Recipe (serves 5)
~ 6 ears of 🌽 in husk
~ naan bread
~ 🌶️ *cashew queso ( and they are finger licking good😋, see below and my stories)
~ 1/2 cup mini King oyster mushrooms (grilled with vegan butter)
~ oil and gochujang sauce for grilling corn
Mixed veggies suggestions:
~ 2 cut Persian cucumbers, chopped
~ 1 🥑, chopped
~ 1/2 cup shredded purple cabbage
~ 1/4 cup cherry tomatoes
~ butter lettuce @eatpetesgreens
~ spinach @organicgirl
Peel 🌽 and remove silks, brush some oil, gochujang sauce and grill until cook and char edges shown. When corn is cool enough to handle, cut corn from the cob.
In a bowl, mix cucumbers, purple cabbage, tomatoes and 🌽 together with 1/4 cup of queso sauce until well combined.
I toasted my naan bread a little until warm and top with veggies, 🥑 and corn mixture. Serve with more queso if needed. Delicious!😋
