Spaghetti Squash Pad Thai 🍤🍜⁣

Inspired by my roomie @whataldenate to make this bowl of gooood 😋😋⁣

I took @skinnytaste’s pad thai recipe and just substituted spaghetti squash for the rice noodles to lower the points! Here’s what I used to make 3 servings:⁣

1 medium spaghetti squash⁣
30 medium shrimp⁣
2 cloves minced garlic ⁣
3 eggs ⁣
37 gm salted peanuts⁣
Green onion⁣
Sesame seeds (optional)⁣
Lime wedges (optional)⁣

Sauce:⁣
3 tbsp fish sauce⁣
2 tbsp rice vinegar⁣
4 tbsp water⁣
2 tbsp sugar substitute ⁣
1 tsp chili powder ⁣

Combine all ingredients for sauce in a bowl and set aside. Spray and heat a pan on the stove. Add garlic and shrimp. Once cooked, add your cooked spaghetti squash (see my highlight for easiest way to prepare!). Stir for about 30 seconds, and then move to one side of the pan. Crack and scramble your eggs. Once done, stir everything together. Add your prepared sauce and chopped up green onion. Once combined, stir in half of your chopped up peanuts. Transfer to three bowls and top with more green onion, chopped peanuts, sesame seeds, and lime wedges 🤤⁣

FYI – to chop the peanuts, I just put them on a cutting board and place the bottom of a bowl on top of them and press down over and over 👍🏼⁣

2 points per servings just for the peanuts!!! Could leave those out to make it 0, but I love the flavor that the peanuts add 😋😋⁣
