Southwest Chicken Frittata 🤤
I loveeee any form of breakfast casserole so I knew I needed to try this when I saw this recipe by @drizzlemeskinny!! 💕
1.25 diced peppers (I used frozen)
1/2 c diced red onion
1 c frozen corn
1 clove garlic
1 1/2 tsp chili powder
1/2 tsp paprika
1 tbsp lime juice
6 oz shredded chicken
1/2 c diced tomatoes (I used Rotel)
6 eggs
1/4 c unsweetened almond milk
Salt & Pepper
Cilantro for topping
I didn’t have a cast iron skillet. So I combined my peppers, corn, spices, lime juice, Rotel, and chicken on the stove and sautéed for about 10 minutes. I then transferred the mixture to a pie pan, mixed my eggs, milk, salt and pepper in a bowl, and added to the pepper mixture. Then cooked in the oven at 350 for about 20 minutes til the eggs were cooked through!! So yummy and 0 points!! 💙 😋
