Sous Vide Egg Bites 🥚
Y’all saw them on my story this morning and here they are again! These are the perfect snack or grab and go breakfast. I love to try different variations of these, changing up what you mix in. The sun dried tomatoes and basil in these are DELISH!!!!! 😋
3/4 c FF cottage cheese
3/4 c nonfat plain Greek yogurt
1 c cheese (I use FF cheddar)
Salt & pepper
Combine all ingredients in a blender. Spray your egg mold with cooking spray and add your mix ins to the bottom of each cup (here I use sun dried tomatoes and chopped basil). Fill each cup about 3/4 way full with the egg mixture. Cover tightly with tinfoil. Add 1c water to your instant pot and place egg mold on the trivet. Set to manual for 8 mins. Once done, let the pressure manually release and remove each egg bite! Can also cook these in the oven at 375 for about 20 mins and use a muffin tin if you don’t have the egg mold!!
