Shrimp Tacos with Mango Salsa & Cilantro Lime Dressing 🌮🌮🌮
The flavor combo of these tacos is SO good! Y’all need to try ASAP! And if you’re looking for an app, just eat the mango salsa with chips!! You won’t regret taking the time to try this one 😍
Mango Salsa:
2 mangos, diced
1/2 small red onion, diced
1 red bell pepper, diced
1 jalapeño, diced
1 bunch cilantro, diced
1/4 teaspoon salt
Juice from one lime
Mix all ingredients in a bowl. Stir and refrigerate for at least half an hour before serving to let all those flavors combine 😋
Cilantro Lime Dressing by @keepingonpoint:
1/2 cup plain, non-fat Greek yogurt
1/4 cup cilantro
Juice from 1/2 lime
1 teaspoon ranch seasoning
Pinch of salt
1 tablespoon water
Combine in a food processor or blender until smooth.
For the shrimp, cook 1 lb on a sprayed pan on the stove with chili powder. Then you can assemble your tacos! Heat corn tortillas in the microwave for 30 seconds then pile on your ingredients. Along with the salsa and dressing, I topped mine with cotija cheese 🤤 AND what kind of taco night is it without margs?? I’ll post this skinny marg recipe later 😏☺️
Only points for these tacos come from the corn tortillas (2 for 3 or 3 for 4) and the cheese (1 oz or 2 tbsp for 4 points) 💙 leave out or use a lighter cheese if you don’t want to use as many points 🙂 this made enough for about 9 tacos and I still had leftovers of the salsa and cilantro lime sauce!
