Rice Cooker Shrimp Fried Rice 🍤🍚
@suddenriceboiler offered to send me a rice cooker to try and I knew immediately that I needed to take them up on it!! Fried rice is one of my all time favorite dishes and using my new rice cooker, it was SO easy to make. Here’s what I used -
-1/2 onion, chopped
-2 cloves garlic, minced
-1/2 tsp ginger
-1/2 c frozen peas
-3/4 c brown rice
-1 c water
-1/2 lb shrimp (about 18 large)
-2 tbsp soy sauce
-1 tbsp swerve brown sugar
Add onion, garlic, ginger, peas, rice, and water to your rice cooker. Place shrimp on top and close lid. Set your cooker to the cook setting and let it do it’s thing! Once it’s finished, it’ll switch back over to the warm setting. Mine took about 45 minutes. Once done, mix your soy sauce and brown sugar until combined and pour over your rice, mixing well. I scrambled two eggs and mixed them in, and topped with green onion.

This entire bowl comes out to 14 points, mainly for the rice. I split it into two servings for 7 points each 💙💙 If you’re on purple and you use brown rice, this needs to be your new go to, it would only be 1 point per serving!!
