I’ve been wanting to make it since I saw @that_vegan_dad share his recipe and I finally did!
It was AMAZING! Go to his page and save his post with the recipe, you’ll want to make it many times. I know this one is going into my cooking repertoire!

Okonomiyaki is a Japanese pancake with whatever you like in it! This recipe has cabbage, carrot, and potato. The only variation I made from @that_vegan_dad’s original recipe was using fresh ginger instead of powdered. Then traditionally it’s topped with BBQ sauce and mayonnaise, so I used vegan mayo and a Korean BBQ sauce, plus green onion.

This book was really good. It’s so much more than a 1-month vegan challenge.
