Made this delish bowl of goodness a wee while ago. It’s just leftover veg chilli (recipe is further down my page) with some spinach, lettuce, baby plum tomatoes, cucumber, sweetcorn, salsa, guacamole and some bulgur wheat/quinoa mix cooked up. I also had a wee bit of grated vegan @applewood_cheese with it.

This book was really good. It’s so much more than a 1-month vegan challenge. It comes with 10 other bonus books that offer valuable information that isn’t found in any other vegan recipe book I’ve bought. I really enjoyed reading the guide on Macronutrients and How to deal with social challenges.
