2 flax eggs (1 tablespoon of chia/flax meal with 8 tablespoons of water)
1 cup of coconut sugar or granulated sugar
3/4 cup of mashed banana
1/2 cup of coconut oil, melted
1/2 cup of plant based milk
2 cups of all purpose flour
2 tsp of baking soda
1 tsp of cinnamon
A dash of salt
3/4 cup of blueberries (tossed with 1 tablespoon of flour)
Preheat your oven to 350F, prepare 3 mini loaf pans.
I just added it all into one bowl tbh
1. Add all your wet ingredients and mix well.
2. Add your dry ingredients and stir until just combined.
3. Fold in your blueberries carefully.
4. Bake for 45-55 minutes. Let them cool completely.” –
This book was really good. It’s so much more than a 1-month vegan challenge. It comes with 10 other bonus books that offer valuable information that isn’t found in any other vegan recipe book I’ve bought. I really enjoyed reading the guide on Macronutrients and How to deal with social challenges.
