On today’s episode of making random things bc I’m trying not to go to the grocery store.. I have 0 point edamame egg drop soup!! 🍲 This recipe came straight out of @ww’s MyWW Program Cookbook 💙
The “Easy Soup Base” is just 1 c chicken broth, 2 tbsp diced onion, 1/4 minced garlic clove boiled together.
For this soup – add 1/3 c frozen, shelled edamame to the boiling soup base. In a small bowl, whisk together 1.5 tsp cornstarch with 1 tbsp cold water. Whisk mixture into soup and let simmer until thickened. Drizzle 1 beaten large egg into broth while stirring in a circular motion. Cook for a minute, then pour into a bowl. Top with thinly sliced scallions and add soy sauce if you want!
A little odd to be eating on a hot summer day immediately following a workout, I know.. but this was delicious and getting me excited for fall when I’m going to be making ALL the soups. Also giving me big hibachi vibes, which is one of my all time favorite food groups (yes hibachi is a food group) 😋
