Mexican Chicken Salad 😋
This is a quick, easy, and super tasty recipe by @kalekouture I made for meal prep this week!! It’s a twist on chicken salad I wish I had thought of sooner!!! Here’s what I used:
30 oz chicken breasts (can used canned or rotisserie as well)
1/2 c nonfat plain green yogurt
1/4 c light mayo (7)
1 can corn
1/2 can black beans, drained and rinsed
Juice from 1/2 lime
1 tsp @traderjoes chili lime seasoning
Salt & pepper to taste
Season your chicken with chili lime seasoning and grill until cooked through – can also boil, cook in the oven, etc. After removing from the grill, place in a bowl and shred. Add all your other ingredients, refrigerate, and serve! I separated mine into three equal size servings for 2 points each! 💙
