Lunch! You can never go wrong with Sesame Tofu

Sauce mix: 1/3 cup of Maple syrup or any other sweetener (optional)
¼ cup cornstarch or arrowroot
½ cup water or low sodium Veg. Broth (optional)
⅛ cup white vinegar or rice vinegar
1/4 cup of soy sauce or liquid aminos or tamari
2-4 tsp sesame oil (Optional) 2 tsp ginger
1 teaspoon chile paste or Sriracha (optional)
1-2 cloves of garlic, minced Dash of sesame seeds

Tofu: Block & a half of extra firm Tofu Cornstarch Or arrowroot 85g of broccoli

Sauce – Heat a skillet over medium heat. Add sesame oil (optional), garlic and ginger. Cook the garlic ginger for a minute. Add the soy sauce, rice vinegar, maple and bring to boil. Mix cornstarch in the water and add this cornstarch slurry (cornstarch & water mix) and bring to a boil to thicken, Take off heat.

Tofu – drain & cut into cubes. bake in the oven at 425 degrees for 23 minutes (flip cubes over half way). Take out of oven, then mix into sauce.
