Made a delicious dish that I worked on over the weekend to perfect it.😋 Never had real tonkatsu before so I can’t compare, but this is sooo good🤩
Recipe (2 servings)
~ 1 pack of firm tofu, drained
~ 2 slices of vegan cheese (used @followyourheart )
~ oil for frying, salt & black pepper to taste
Batter: ~ 1/3 cup rice flour/all purpose flour
~ 1/3 cup chickpea water
~ panko crumbs
Tonkatsu sauce (inspired by @food52 🙏🏻 ): Whisk together 1 tablespoon ketchup, 3 teaspoons vegan Worcestershire sauce, 1 teaspoon soy sauce/stir fry sauce (optional or season with salt), 1.5 teaspoons maple syrup, and 1 teaspoon mirin (optional) in a bowl, set aside.
~ cooked grain, sliced cucumbers with sesame seeds, shredded purple and white cabbage in homemade 🥕 ginger dressing
Set up your batter station, put each ingredient in a separate plate. Add a little water to panko crumbs to make it wet.
Slice tofu horizontally, so you get two blocks, season with salt and black pepper. Then, cut each half again horizontally but don’t cut all the way, leaving some space to hold the cheese. Slide 🧀 in between. Do the same for the other half.
Dredge tofu in flour, pat and remove excess, then chickpea water (be sure all sides are coated), then pack all sides in wet panko crumbs. 🍃
I did shallow pan fry, where my oil covers half of the tofu when frying. Fry in medium heat. Tofu Katsu is ready when all sides are golden brown. Place fried tofu on paper towel to absorb the remaining oil. To serve, drizzle tonkatsu sauce over and pair it with the sides above.
