Super simple to get this ready for a healthy breakfast.
~ 1 block of firm tofu, drained and mashed
~ 1/4 cup sliced crimini mushrooms
~ 1 small tomato, cubed
~ 1 small jalapeño, sliced
In a heated pan with 1 tsp avocado oil, sauté mushrooms until just slightly soft, add tomatoes, jalapeño and tofu. Seasoned with some turmeric, garlic powder, dried minced onion, s&p to your preference.
