⁣Thai Basil fried rice with tofu, anyone😋?⁣

Happy Thursday, friends🤗! Have you tried making fried rice at home? It’s quick, simple and all in one pan – really🤩.
The trick to get fluffy rice is to use less water than required when you cook the rice. For this dish, I used Jasmine rice that I received from @lotusfoods as Thank you🙏🏻very much for your generosity💗

Recipe (serves 3-4)⁣
Ingredients:⁣
~ 3 cups of cooked Jasmine rice⁣
~ 1 pack firm tofu, drained and cut into small cubes⁣
~ 1 cup packed fresh Thai basil (I 💗 this herb)⁣
~ 1/2 cup chopped 🍅
~ 3 cloves of garlic, minced⁣
~ 2 teaspoons soy sauce to season tofu⁣
~ few Thai chili, sliced cucumbers, lime wedges⁣
~ salt to taste & oil⁣

Sauce (whisk all in a bowl):⁣
~ 2 tablespoon soy sauce/liquid amino⁣
~ 1 tablespoon ‘fish’ sauce⁣
~ 1 teaspoon maple syrup or 1/2 teaspoon coconut sugar⁣

In a nonstick pan with 1 teaspoon oil, pan fry tofu until lightly brown, season with 2 teaspoons soy sauce and set aside. 🍃
Using the same pan, add 3 teaspoons oil and sauté garlic until fragrant. Then, add tomato, tofu, rice & sauce. Stir continuously until each grain is coated with sauce. Season accordingly to your preference.

Finally, stir in chili and Thai basil, turn off heat and mix rice until well combined. Serve warm, I like to pair it with cucumber and a squeeze of lime juice. ⁣

* Closest sub for fish sauce: 2 teaspoons coconut sugar, juice of 1 lime, 1 tablespoon soy sauce, 1 tablespoon hot water, and chopped Thai chilies.⁣
