Lemongrass tempeh sushi roll, anyone?😋 Happy Monday, everyone🤗! Have you tried making sushi at home? Give it a try if you have not. Making sushi at home allows me to customize my sushi filling, like this lemongrass tempeh. It’s fun to mix and match, anything with rice and seaweed is 👍🏻 to my family.

~ 1 package of tempeh, sliced into 1-inch thick
~ 3 tbsp frozen lemongrass
~ 1.5 tbsp soy sauce
~ 1 tsp maple syrup or pure cane sugar
~ 1 tbsp vegan fish sauce (optional)
~ Cucumber, cut horizontally
~ Red pepper, cut into matchstick
~ Greens of your choice
~ 5 cups of cooked 🍚
~ 1 package of seaweed
~ wakame
In a heated pan with 1 tsp oil, lightly pan fry tempeh until crispy on the edges, set aside. Using the same pan, add 2 tbsp oil and saute lemongrass until fragrant, add tempeh, syrup/sugar and sauces, let simmer until all liquid is absorbed.
Lay a sheet of seaweed on your cutting board, place 1/2 cup of rice and spread thinly to cover 3/4th of the seaweed, top with veggies and tempeh. Roll to seal and cut into your desired shapes. My fillings were really flavorful so I skipped seasoning the rice. Serve with pickled ginger, wasabi and soy sauce.
