Kale Shrimp Caesar Salad 🥗
This is the best salad for a warm, spring day! ☀️ I have all the ingredients prepped and ready to throw together before work each night this week.
Here’s what’s in my 4 point salad -
A bowl full of prepared kale
25 gm BelGioioso shaved parm (3)
12 shrimp seasoned with garlic, paprika, & chili powder
A handful of homemade chickpea croutons
70 gm homemade @litecravings Caesar dressing (1)
For the dressing, google “litecravings caesar dressing” – I used all Greek yogurt instead of mayo making the entire recipe only 5 points! Each serving is 1 💙
For the chickpea croutons you’ll need 2 15 oz cans chick peas, chili powder, garlic powder, oregano, salt & pepper —— preheat your oven to 400. Drain the chick peas and lie out on a towel. Then peel the little shell off each chick pea, very tedious but I read this is necessary to get that perfect crunchy texture. Dry the chick peas thoroughly, then spread out on a baking sheet lined with tin foil and bake for 15 minutes. Once complete, pull from the oven, spray the chick peas with olive oil baking spray and sprinkle on all your seasonings. Give them a good shake and return to the oven for another 10 mins. Once that time is up, pull out and shake again and bake for 10 more mins. Turn off your oven and let them cool with the oven door cracked open. Store in an airtight container!
