Kale Mexican Street Corn Salad 💃🏼🌽⁣

@abby.allen told me about this salad recipe by @eatingbirdfood last week and I immediately added the ingredients to my grocery list!! It turned out SO good.. thankfully I have enough for 3 salads so I can have it again the next 2 nights 🤤⁣

For the street corn:⁣
4 ears ⁣
1/2 c red onion, diced⁣
1 jalapeño, diced ⁣
2 cloves garlic, minced⁣
1/4 c cotija or feta cheese – I used reduced fat feta ⁣
***Combine these ingredients in a bowl⁣
2 tbsp plain Greek yogurt⁣
2 tbsp light mayo⁣
Juice of 1 lime ⁣
1/2 tsp chili powder⁣
1/2 tsp paprika⁣
1/4 tsp sea salt⁣
1/4 tsp ground pepper⁣
1/3 c fresh chopped cilantro, + more for topping⁣
***Combine these ingredients then add to the corn mixture and stir everything together – chill and eat alone, or add it to your kale salad when you’re ready!⁣

I split mine into three equal servings for 2 points each (points for the feta and mayo) ! 💙⁣

For the salad:⁣
Shredded /chopped kale⁣
1/3 avocado – mine was 28 gm for 1 point⁣
Juice from 1/2 lime⁣
Salt⁣
1 grilled chicken breasts⁣
1 serving of your Mexican street corn salad⁣
Crushed tortilla chips – I used 15gm of my homemade, air fried tortilla chips for 0 points ⁣(forgot to add these before the pic)
Cotija or feta cheese, for topping – I used 1 oz of Trader Joe’s fat free feta for 0 points ⁣
Diced tomatoes ⁣
***Squeeze lime juice over kale, add a small amt of your avocado and salt, and massage until kale softens. Add all other ingredients and enjoy! 😍 My salad came out to 3 points total 💙⁣
