Instant Pot BBQ Beer Pulled Chicken Tacos 🌮🌮 w/ Avocado Ranch Slaw 🥑🥑
This is one of the many recipes I’ve saved from @halfbakedharvest I’ve been wanting to make, and I’m so glad I finally tried it!! The pulled chicken and avocado ranch combo is a MUST TRY!!
2 lbs boneless, skinless chicken breast
2 tsp smoked paprika
2 tsp chipotle chili powder
1 tsp garlic powder
1/2 tsp cinnamon
Salt & pepper
1 1/2 c BBQ sauce (I used G Hughes sugar free honey flavor)
1/2 c beer (I used Miller Lite 🍻 lol)
Combine all ingredients in your instant pot and set to high pressure for 8 mins. Once done, manually release the pressure and open the lid. Set to sauté and let simmer for about 5 mins until the sauce thickens. Shred your chicken and mix back in with the sauce.
1 avocado, halved
1/2 c buttermilk
1 c fresh cilantro
1 jalapeño, halved and seeded
Juice from 1 lime
1/2 tsp garlic powder
1/2 tsp onion powder
Combine all ingredients in a food processor or blender and mix until smooth. Can add more buttermilk if too thick.
3 c shredded cabbage
2 c grilled or steamed corn
1/2 c fresh cilantro roughly, chopped
2 tbsp chopped fresh chives
Warmed corn tortillas for serving
Add your shredded cabbage to a bowl with a few spoonfuls of the ranch and toss to combine. Add the corn, cilantro and chives, and season with salt. Put together your tacos with your warm corn tortillas 😋
Split into 6 servings total, your chicken comes out to 1 point per serving, and the avocado ranch slaw is 2 points per serving!! 💙💙 3 Mission extra thin corn tortillas is 4 points. For all this food, 7 points ain’t too shabby!! 🤤 Catch the step by step on my highlights!!
