I’m trying to document all of my easy recipes for Veganuary on my IG @thefreckledboho . Anyway, I wanted to let everyone know someone is stealing our pics and recipes off this sub and passing them off as their own on Instagram and claiming they are found in some cheap scammy ebook. So there’s a heads up. If u want the account name DM me.

Recipe (I don’t have exact measurements here so it’s guesstimates and definitely doesn’t need exact measurements in any case).

About 2 cups cabbage chopped

2 large carrots chopped

2 cups kale (stems removed and chopped)

1/2 small red onion diced

3 baby Bella mushrooms diced

2 medium yellow potatoes chopped

1 can drained and rinsed white kidney beans

Sea salt and pepper to taste

5 cups veg broth or 5 cups water and 5 tsp vegetable flavor better than bouillon

1/2tsp each of garlic- ginger- cumin

2 tsp fresh thyme

I threw it all in a pot and boiled on medium for 15 min till the potatoes and carrots were tender. Super delicious. I usually spend a lot of time on soups and barely put thought into this one and hubs said it’s his favorite. Go figure! Lol
