Homemade 1 Point Pesto 🌱⁣

My basil plant is THRIVING right now so I thought it was about time I make something with it, so obviously pesto was my first thought! Found this recipe right on the @ww website and whipped it up on just a few minutes. Last night I mixed it in with TJs cauli gnocchi, chicken, and mushrooms and it was DELICIOUS, this morning I mixed it in with my scrambled eggs! 😋 Thankfully I have more in the fridge to eat over the next few days! Here’s the recipe – ⁣

1 tbsp pine nuts⁣
1 c basil leaves ⁣
1/4 c reduced-sodium chicken broth⁣
2 tbsp grated parmesan cheese⁣
1/2 tbsp olive oil⁣
1 garlic clove⁣
1/4 tsp salt⁣

Place pine nuts in a small skillet and set pan over medium heat. Cook until nuts are golden, shaking pan frequently to prevent burning, about 3 minutes. Let cool and then add all ingredients into a food processor and process until smooth.⁣

This made 4 servings of about 2 tbsp each, and just 1 point each! 💙⁣
