Hi there, It’s my first time posting here 🌿 I’m a Thai living in Italy. At times I miss Thai food. Here’s a menu if you ever need a spicy fix.
Green curry soy protein with eggplants. ☺️
Two or three table spoons of green curry paste. First, add some oil to the pot and fry the green curry paste until aromatic. Add soy protein and fry until it mixes nicely. Add coconut milk and bring to simmer then add a cup of water. Add eggplants and bergamot leaves if you have and bring to boil.
To taste add some soy sauce, a pinch of sugar and half a lemon juice just to spike up the freshness and taste. This soup is not supposed to be sour but I find adding lemon juice makes the taste more distinct. Garnish with red pepper and cilantro.
Usually we eat with rice or if you wish some rice noodles would go well too.
Ps. Using almond milk instead of coconut milk can do too but it’ll be much more diluted. But if you wish for a less caloric dinner this could be a thought 🙏🏼
