Hawaiian Pineapple Bowl 🍍💃🏼
This dish is soooo tasty!! Like @whataldenate said earlier this week, we have a restaurant here in Richmond called @sabairva who makes a dish just like this that we LOVE, so when we saw this lightened up version in the @ww Done in One cookbook, we knew we had to try 😋😋
1 pineapple
1 tbsp sesame oil
24 medium shrimp
1 red bell pepper
4 slices center cut bacon
2 10 oz bags frozen cauliflower rice
Crushed red pepper
Garlic
Ginger
1 tbsp soy sauce
Green onion
Slice your pineapple in half and scoop out the center. Trash the core and cut up the rest into chunks and set aside. Cook bacon in microwave until crispy and crunch into small pieces. Cook frozen cauliflower in microwave according to package directions.
Add sesame oil to a large pan on the stove. Once hot, add shrimp. Once cooked through, add diced red pepper, bacon, ginger, garlic, and crushed red pepper. Stir to combine, then add your cauliflower rice, soy sauce, green onion, and pineapple chunks. Stir until heated through and divide evenly between your two pineapple halves.
Mine came out to 5 points per serving on blue. Points come from sesame oil, bacon, and soy sauce! 💙💙
