Green vegetable twice baked potato inspiration!

So I had two left over baked potatoes that I threw in the oven alongside other food. I wanted a satisfying 20 min meal and I wanted some green vegetables.

Scooped out the cold insides and threw the skins in a hot oven.

In a pot on the stove I tossed in…

A chopped leek.

About 15 sliced Brussels sprouts.

A heaping spoonful of minced garlic.

Cooked for a bit until they get a little soft.

Added the potato insides.

A can of white beans.

Nutritional yeast, onion powder, white pepper, chili, smoked paprika, and (a bit too much) turmeric for color. Add a splash of soy milk and stir vigorously to get a soft texture while heating in the pot until warm.

Fill the Crispy skins and pop under the broiler until toasty. Top with parsley.
