Crockpot Mushroom Chicken & Rice 🍄
For meal prep this week I wanted to use things I had in the house in order to avoid a grocery trip before going back to the beach on Wednesday. I ended up throwing this together in the crockpot and it turned out perfect to take to work for lunches!
10 oz chicken breasts
1 container white mushrooms, sliced
1 small white onion, diced
2 cloves garlic
2 c chicken broth
TJs mushroom umami seasoning
1 c rice (I used white rice bc it’s all we had)
Combine all ingredients in your crockpot except rice. Cook on low for 4 hours (until chicken is cooked and ready to be shredded). Add rice and stir so it is submerged in the broth. Continue to cook for 10-15 mins until rice is cooked (I used instant rice so it cooked quickly. Turn off your slow cooker and remove chicken. Shred and return back into the slow cooker and stir well until everything is combined.
I split into three equal size servings for 3 points each! 💙 Would be delish to mix in a little hot sauce or top with some Parmesan cheese 😋😋
