Corn & Feta Guac 🥑
Y’all, this recipe is always a hit! I am always getting requests to make this over and over and over again. If you need a last minute idea for your 4th of July cookout this afternoon – here you go!
5 ripe avocados
1 can corn
5 oz container feta (I usually used reduced fat or fat free)
1 jalapeños, diced
1/2 red onion, chopped
Juice from 1 lime
1 bunch of cilantro, chopped
Salt & pepper to taste
Spray a pan on the stove and add your corn with some salt and pepper and cook over medium heat. Stir occasionally until the corn is charred. In the meantime, slice your avocados and mash up in a large bowl. Add your feta, jalapeños (more or less depending on how spicy you want it 🌶), red onion, cilantro, lime juice, salt, and pepper. Stir to combine. Once corn is nice and charred, add to the bowl and stir. Measurements are all sort of to taste, so make sure you taste test and refrigerate before serving.
I like to eat it with my homemade, air fried chips to save some points! This comes out to 4 points per 1/4 c serving 💙 and of course you need this avocado tray from @target for serving purposes!! 😍
