‼️ Chicken Salad ‼️
This chicken salad recipe is always a hit!! It’s quick and easy to throw together for a group, or to have in your fridge for a quick lunch! I used to make it with just half parts mayo and half parts sour cream, which is DELISH, but decided to make it more WW friendly with Greek yogurt, and it’s still so tasty – sometimes I feel like greek yogurt takes to the flavor of whatever you mix it with 🧐
2 chicken breasts – this is what I had in the house, I love to use rotisserie chicken
1 tbsp light mayo
6 tbsp fat free sour cream
4 tbsp nonfat plain Greek yogurt (or as much as you want to get it to your preferred consistency)
Sliced grapes
Salt & pepper
Optional add ins ‼️ These add delicious flavor to the chicken salad, but obviously add points -
Toasted sliced almonds
Shredded Swiss cheese
I boiled my chicken breasts and then shredded them. Like I said, if you can get a rotisserie chicken, it adds so much flavor. Mix everything together and store in the fridge until ready to eat! I made two servings out of this for 2 points each, then served it on top of an everything bagel thin for an additional 3 points, making my lunch 5 points total! 💙

Yumm! I like to add celery and celery seed. It pairs well with the grapes and just kind of adds crunch and not too much flavor!

I add a little red onion, hard boiled egg and dill relish (also grapes) to cut the Greek yog. I make it fully with GY and the red onion covered that sour taste you can sometimes get. Throw that stuff in a romaine lettuce boat (add Another pickle BC #duh!!) And it’s a 0 pt chicken salad meal when all is said and done. Sometimes EBTB seasoning too! Mmmm! 👏🏻
