Cauliflower Shrimp Fried Rice 🍚⁣

Alright y’all here’s another meal I threw together using things I already have in my freezer. Made enough to eat for lunch for the next two days at work!! Super easy and low cal using the cauli rice – and 0 POINTS 💙💙 ⁣

1 bag frozen cauliflower rice⁣
1/2 bag frozen shelled edamame⁣
1/2 bag frozen broccoli⁣
1/2 lb frozen shrimp, thawed and peeled⁣
3 eggs⁣
Coconut aminos or soy sauce⁣

Add your cauli rice to a large pan on the stove. Once heated, scoot it over and add shrimp. I seasoned both with TJs mushroom umami seasoning. Once the shrimp is cooked through, make space to crack and scramble your eggs. Once done, mix everything together and add your veggies and coconut aminos. Start with just a few tbsp and add to your liking. That’s it!! Very few dishes to do afterwards also which is always my fave 🙂⁣
