Cauliflower Casserole ⁣🤤

I’ve made this amazing recipe by @wellplated a few times now and it’s always a crowd pleaser! It takes your original roasted cauliflower to a whole new level when adding the delicious cheesy flavors of cream cheese, gruyere, and Parmesan 😋😋⁣

2 medium heads cauliflower, cut into bite-size florets⁣
2 tbsp olive oil⁣
1 tsp garlic powder ⁣
Salt & pepper⁣
1/4 tsp ground nutmeg⁣
6 slices center cut bacon⁣
4 oz reduced-fat cream cheese, at room temperature⁣
1/4 c nonfat plain Greek yogurt⁣
2/3 c freshly grated gruyere, divided⁣
1/4 c finely grated Parmesan cheese, divided⁣
3 tbsp chives, chopped⁣

Preheat oven to 425. Add your chopped cauliflower to a 9×13 casserole dish and drizzle with olive oil. Add garlic pow, nutmeg, salt & pepper and toss. Place in the oven for 30 minutes, stirring half way through. In the meantime, cook your bacon however you like and crumble once cooled. In a bowl, combine cream cheese, Greek yogurt, 1/3 c gruyere, 2 tbsp parm, and half of your bacon crumbles. Once cauliflower is finished, spoon your cream cheese mixture on top of the cauliflower. Place back in the oven for a few minutes to get the mixture melty, then pull it out of the oven and stir everything up. Top with the remaining cheeses and bacon crumbles. Return casserole to the oven for another 10ish minutes until your cheese is melted. Broil for the last few minutes to get the top nice and browned. Remove from the oven, top with your chopped chives and serve 😋⁣

For 12 equal size servings, this comes out to 3 points per serving! 💙⁣💙
