Buffalo Zucchini Boats 🔥🥒⁣

This recipe by @theskinnyishdish makes for such a satisfying and filling dinner!! She uses ground chicken to give those major buffalo chicken vibes, I used ground turkey because it’s what I had in the house, and it worked out perfectly! ⁣

3 medium zucchinins⁣
1 lb 99% fat free ground turkey ⁣
1/4 c crumbled bacon bits⁣
1/4-1/2 c buffalo sauce (amt depending on your spice preference)⁣
1 tbsp Ranch seasoning mix⁣
1 medium yellow onion, chopped⁣
1 tbsp minced garlic⁣
Cheddar cheese (I used 75 gm fat free cheddar on half, and reduced fat on the other half)⁣
Salt & Pepper to taste⁣

Preheat oven to 400. Slice each zucchini in half length wise and scrape out the middle with a spoon. Save and chop up the inside and set aside. Cook your ground turkey on the stove. Season with salt & pepper. Once cooking is almost complete, add garlic, chopped onion, chopped zucchini, bacon bits, buffalo sauce, and ranch seasoning and stir to combine. Assemble your zucchini halves in a sprayed 9×13 pan and divide your mixture evenly into each “boat.” Top with cheese, cover with tin foil, and bake for 15 mins. Remove tinfoil and bake for another 15 mins. I broiled for about 3 more minutes. Remove from the oven, add cilantro for garnish if you’re fancy like me, and serve! Each boat comes out to 1 point plus whatever cheese you topped yours with! 💙💙💙 I had 2 halves for just 3 points total with the fat free cheddar! ⁣
