Buffalo Shrimp Salad 🍤🥗
If you’ve followed me for a while, you may have seen the buffalo shrimp tacos I posted a while ago using @kindlykassy’s shrimp recipe. I’ve been wanting to try the salad version ever since I made the tacos and it turned out AMAZING!
My salad has romaine, 9 buffalo shrimp, cherry tomatoes, chick pea croutons (find this recipe a little further down in my feed), 1 oz fat free feta, and 0 point ranch!! The whole thing comes out to just 3 points for the 9 shrimp! 💙
For the shrimp:
In a zip lock bag mix 2 tbsp flour, 1/8 tsp salt, 1/8 tsp pepper, 1/4 tsp garlic powder, 1/4 tsp paprika, 1/4 tsp cayenne, 1/4 tsp baking powder
Add 18 shrimp and shake around, arrange on pan and refrigerate for 20 mins, then add back to the bag and shake some more.
Mix 1 egg with 1 tbsp hot sauce, and put 1/2 c panko in another bowl. Dip shrimp in egg mixture and roll in panko, then arrange in air fryer. Spray with cooking spray and air fry at 400 for 8 mins, flipping half way through. Remove and toss in buffalo sauce.

Mix 1 tsp ranch seasoning with 3-4 tbsp nonfat plain Greek yogurt and a splash of water to thin it out a little! That’s it!
