Buffalo Chicken Salad 🥗
Posting this salad for the buffalo chicken and the onion straws… they are DELICIOUS!!! These onion straws taste like something you’d get at a restaurant. SO GOOD 🔥🔥
1 large chicken breast, cut into strips
2 tbsp flour
Salt, pepper, garlic powder, paprika, cayenne, & baking powder
1 tbsp buffalo sauce
1/2 c panko
1/4 large white onion
For the chicken:
In a zip lock bag mix 2 tbsp flour, 1/8 tsp salt, 1/8 tsp pepper, 1/4 tsp garlic powder, 1/4 tsp paprika, 1/4 tsp cayenne, 1/4 tsp baking powder
Add chicken and shake around, arrange on pan and refrigerate for 20 mins, then add back to the bag and shake some more – I ended up having 1 tbsp of the mixture left over so only counted 1 SP of flour.
Mix 1 egg with 1 tbsp buffalo sauce, and put 1/2 c panko in another bowl. Dip chicken in egg mixture and roll in panko, then arrange in air fryer. Spray with cooking spray and air fry at 400 for 10 mins, flipping half way through. Remove and toss in buffalo sauce.
For the onions:
Thinly slice your onion and peel it into rings. Dip the onion rings in the same egg mixture and then into the same panko. The 1/2 c of panko was enough for both the chicken and onions. Air fry at 400 for 5-7 mins, shaking half way through.
Counted 3 SP for the panko and 1 SP for the flour, making this entire salad just 4 points 💙💙 I used romaine, diced tomatoes, and 1/4 c fat free cheddar in the salad. And topped it with 0 point ranch 😋
0 Point Ranch:
Mix 1 tsp ranch seasoning with about 1/4 c nonfat plain Greek yogurt and a splash of water to thin it out a little! That’s it!
