Blueberry Cheesecake Egg Rolls ⁣🤤⁣

Saw @dwardcooks post this new recipe of his last week and quickly ran out to get the ingredients! Me and @scs4994 felt all fancy rolling up these lil guys last night and ate 3 each right out of the air fryer 🤤 y’all need to try these ASAP!⁣⁣⁣
⁣⁣⁣
2 c blueberries⁣⁣⁣
1 tbsp + 1 tsp sweetener (divided) – I used truvia , he used honey! ⁣⁣⁣
1 lemon, juiced and zested⁣⁣⁣
1 tbsp of cornstarch + 1 tbsp water⁣⁣⁣
2 oz FF cream cheese⁣⁣⁣
1/4 c Greek yogurt⁣⁣⁣
Splash of vanilla extract⁣⁣⁣
10–12 egg roll wrappers (I use Nasoya)⁣⁣⁣

Add blueberries, 1 tbsp sweetener, and lemon juice and zest to pot on the stove. Bring to a boil and reduce heat to a simmer. Let simmer for about 8 minutes, stirring occasionally, until your blueberries have exploded and you have a juicy blueberry mixture.⁣⁣

Combine corn starch with water to create a sludge, and add to blueberry mixture. Stir until combined and thickened. Remove from heat.⁣⁣

Combine cream cheese, Greek yogurt, and 1 tsp sweetener in a bowl. Add your blueberry mixture and mix it all together. Refrigerate for 30 minutes.⁣⁣

Spoon about 2 tbsp mixture onto each egg roll wrapper and roll up! @dwardcooks has instructions on exactly how to do this on his blog post! Spray your air fryer, line up your egg rolls in the basket, spray with cooking spray, and air fry for 10 mins at 350. ⁣⁣

Mine came out to just 2 points each! We drizzled 1 tsp of honey on the ones we ate for an additional point to give them an extra sweet touch!! 💙⁣⁣
