BBQ Chicken Casserole 🐔
My friend @madisonrmedlin sent me this recipe last week and I knew immediately I wanted to try it!!! You can use it as a dip, eat it over rice, on a tortilla, on tacos, serve over nachos, or just eat it alone… the options are endless. And it’s sooo yummy and just 1 point/serving (makes 6 servings total) 💙💙 I made this for lunches and ate it over several days. It reheats perfectly!
4 cups chicken, shredded (I used a rotisserie chicken)
1 cup canned black beans, drained
1 cup canned corn, drained
1 cup G. Hughes sugar free BBQ sauce (2)
1/4 cup cilantro, chopped
1/2 cup red onion, chopped
3 oz reduced fat feta (optional – I just love feta and add it to all sorts of things lol) (4)
Mix everything together & bake for 15 minutes at 350.
After 15 minutes top with cheese, more cilantro, and sliced jalapenos. Return to the oven at 350 for 5-8 more minutes (until cheese is melted).
1 cup cheese, shredded, your choice (I used 85 gm FF cheddar) (1)
1/4 cup cilantro, chopped,
1 jalapeno, thinly sliced
