Baked Scallop Pasta 🌊
I’ve never made scallops myself before, but I found them on sale at @lidlus the other day so thought I’d attempt! Started searching online for a recipe and @skinnytaste came through, per usual 😋
About 26 sea scallops (mine were very small but the real recipe calls for 16 large)
1/4 c panko crumbs
1 1/2 tbsp grated parm
1 tbsp fresh minced parsley
1/4 tsp dried oregano
Salt & pepper
Juice of 1 lemon, divided
1 tbsp light butter (used less than she called for)
1 tablespoon white wine
Preheat oven to 400. Pat scallops dry with a paper towel and season with a little salt. In a bowl, combine panko, parm, oregano, salt, and pepper. Arrange scallops on the bottom of a greased dish. I used my small Pyrex dish. Top with the crumb mixture. Whisk together half of your lemon juice, melted butter, and white wine and pour over scallops. Bake for 15 mins then broil for 2-3 mins until topping is golden brown. Squeeze the remaining lemon juice over your scallops and serve!
This made two servings (for me and my girl @scs4994) for just 3 points each! I served over 64 gm whole wheat penne for an additional 6 points! 💙💙
