Agave garlic tofu, Thai chili cauliflower bites, and rice👏🏾 I’m working on eating out less and cooking more
I like to use wet and dry batter to ensure my crust stays on.
Wet batter:
-1 cup flour
-1 1/4-1 1/2 cup water????
– any seasonings you want, I like to use vegan chicken broth seasoning, garlic powder, ground ginger, and garlic salt
Dry batter
– unseasoned Panko (maybe 3-4 cups)
Mix together the ingredients for the wet batter BUT add the water in 1/4 cup increments until you reach the right consistency. The consistency should be slightly thicker than pancake batter. Toss the cauliflower in there and make sure they are all coated. Then toss in the Panko ( I find that doing this process once gives a perfect thickness to the crust!). Let the cauliflower bites rest in fridge for 10 minutes so the flour can absorb and adhere to cauliflower.
In a pan add 2 – 3 inches of oil and turn on to medium high heat. fry the bites until Golden brown!

This book was really good. It’s so much more than a 1-month vegan challenge. It comes with 10 other bonus books that offer valuable information that isn’t found in any other vegan recipe book I’ve bought. I really enjoyed reading the guide on Macronutrients and How to deal with social challenges. Oh and the recipe book is definitely my favorite, which makes it easy to stick to the vegan challenge even after 30 days.⠀I highly recommend this book to anybody thinking of transitioning to a vegan diet.
